Trinitario cocoa is a fragrant cocoa that accounts for only 8% of the world’s cocoa crop. Trinitario is a variety created by hybridizing the Criollo and Forastero varieties, which combines their best qualities: it is resistant to diseases and gives high yields like the Forastero, but at the same time has a rich and noble aromatic profile, like cocoa criollo.
